In the hills of Zitsa, the new winery was built at different levels in order to use as little as possible the mechanical equipment during winemaking. The result was sophisticated white wines, calm and sparkling with a distinctive aroma and a fresh aftertaste.
In 2006, Zoinos takes its final form, a dynamic winery with very high standards (ISO 22000). Throughout this new era and with a new, capable and promising oenologist, Eleni Sinto, the company invested in improving the crops of Debina, Vlachikos and Bekari on the slopes of Zitsa.
Calcareous, sloping terrain dominates at an altitude of about 700 m above sea level and are oriented to the Ionian coast.
Severe winters with enough rain and cool summers, with large temperature differences between day and night, because of the high altitude and the Meltemi winds from the river, allowing the grapes to ripen slowly, reaching the ideal maturation and have kept their acidity, keeping and fully developing the aromas of the separate varieties of Zitsa.
